Pomegranate Zucchini Pasta
There’s so many things you can do with zucchini. We’ve already had plenty to say about the wondrous versatility of this modest little squash. So let’s focus instead on this amazing persimmon dressing!
If you’ve never tasted a well-ripened persimmon, then you simply don’t know what you’re missing. If tasted before they have had a chance to get really, really ripe — we’re talking almost fermented, even — persimmon is aggressively astringent and unpleasant. But as the fruit matures and the tannin levels are reduced, it becomes one of the sweetest and most incredible tasting fruits you’ll find anywhere. But it does take patience! You have to let the persimmon ripen until it becomes so soft it is squishy. Which makes it ideal for dressings!
As always, ginger provides a lovely spicy foil for the sweetness of the persimmon dressing. Give it a try!

The delicious crust is made from dates and figs, and the caramel is dates, apples, and some tasty spices. It may be an apple in the shape of a rose, but dates are really the star player. Vegan Coconut Yogurt
Raw vegan yogurt might seem like a contradiction in terms, and yet here it is. And with only three ingredients!
Sure, this recipe isn’t exactly like yogurt. But nothing is. And that’s okay, because this super simple vegan yogurt is pretty awesome in its own right. The probiotic capsules will help invigorate your gut bacteria just like traditional yogurt, and the coconut will give it that smooth texture.
Serve it up with your favorite fruits and berries Maybe a dab of honey. Just like traditional yogurt, its a blank canvas: mix it up however you feel!
Chinese Style Cauliflower with Orange Sauce
This interesting recipe was inspired by an unlikely source: mall food-court style “Chinese” food. It seems weird to think so now, but so many of us grew up loving the sweet taste of that orange sauce. I remember growing up thinking that deep fried chicken balls in orange sauce was a classic of Chinese cuisine.
Now we all know better, and aren’t liable to be found snacking on the fast-food variety of Asian cooking. But there is still something magical about the sweet and savory mix of that orange sauce. With this great guilt-free recipe, you can enjoy that incomparable taste without all the added sugars and other weirdness.
Apples with Raw Caramel
Sometimes, the most delicious things are the simplest. And there’s hardly anything more delicious than dates and cinnamon. Together they combine to make this super hyper-tasty raw caramel. It doesn’t get much simpler than that.
This killer recipe is ready in just 10 minutes, and is an awesome addition to any brunch or snacking situation. Kids will love the caramelly sweetness that needs no added sugar, making for a great after-school snack. And really, so will adults. You don’t need an excuse for this awesome snack! Fruit is good for you!
Now once you’ve got your caramel made up, there are at least two ways to go about eating it. One method is to take your sliced fruit, and just dunk it in there. That’s one way. Alternatively, you can spread your fruit out on a plate and drizzle the caramel over it. Also a good choice. There’s really no wrong way.
Feel free too to change up the fruit. No reason why bananas or pears can’t enjoy a nice coating of raw caramel!
Raw Vegan Cinnamon Rolls
There’s nothing like ooey, gooey cinnamon rolls in the morning. The ooeyness and the gooeyness of these raw, mouth-watering confections is courtesy of three simple ingredients: bananas, dates, and cinnamon. It really simplicity itself. But don’t let the simplicity fool you. These things are rich.
The cinnamon and dates do an amazing job of recreating the taste and texture of traditional cinnamon rolls. Obviously, using bananas instead of flour makes for a different experience, but you’d be surprised just how sweet and rich these things are.
Make sure to use soft, ripe bananas. The slightly harder taste of green bananas subtracts from the overall effect, and they’re harder to roll without breaking. So wait until you start seeing some brown spots.
The biggest challenge with these simple cinnamon rolls is to keep yourself from eating them before they’re ready. It takes a while for these to dehydrate to the proper consistency. Remember: patience is a virtue.
