For Cookie
  1. Soak dates in water for 10 minutes then place pecans into a food processor and pulse until finely ground.
  2. Add all ingredients (including dates) into the food processor and pulse until combined.
  3. Make small cookie patties and place onto a tray. Freeze for 30 minutes.
  4. Move onto the frosting if you dare or have the time.
For Frosting
  1. Drain and rinse soaked cashews then Place in all ingredients (including cashews) into blender and blend until creamy.
  2. Place on top of Pumpkin Spice Cookies.
