Vanilla Slices

Ingredients
Base
- 2 1/2cupsdesiccated coconut
- 1 1/2cupsdates
- 1tspvanilla powder
- salt(pinch)
Filling
- 2cupscashews(soaked 1-2 hours)
- 1/2cupcoconut cream
- 1/4cuprice malt syrup
Icing
- 6Tbspcoconut oil
- 4Tbsprice malt syrup
- 1/2tspvanilla
- 2Tbsppassion fruit(optional, seeds removed)

- Place all the base ingredients into a food processor and run until sticky mixture is formed. Press the mixture in the bottom of a cake tin and set aside.
- Place all the filling ingredients into a food processor and run until smooth. Spread the mixture over the base and pop the cake in the freezer.
- For the icing mix all the ingredients together using a spoon or a fork. If your coconut oil is liquid, put the icing mixture in the fridge for few minutes to firm up.
- Spread the icing mixture over the cake and pop the whole cake back in the freezer to set. When set, cut into slices and serve! Enjoy!
