This brings us back to 400 BC when Hippocrates founded the first hospital near a stream to ensure that patients would have fresh watercress for treatment. To this day it’s still a top choice for fighting infection and cancer, removing free radicals, breaking up kidney stones, improving skin, and purifying blood. Watercress is a cousin to arugula and grows near streams, so it should be soaked for a half-hour to remove pollutants, parasites, or impurities.
Consider adding this amazing leafy green to your soup, salad, or smoothie. The only problem with watercress is its availability; it can be hard to find in some parts of the world, so your best option is a natural foods store.
