  1. Pour your rice coconut milk into the blender together with the bananas, berries and sea salt. Blend until smooth.
Quinoa Breakfast Bowl
  1. Fill two bowls with 1 cup quinoa and 1 tablespoon chia seeds each. Pour the berry smoothie on top.
  2. Add your favorite toppings. Here I used berries, shredded coconut, pumpkin seeds, chia seeds and a sprinkle of toasted almond flakes. Sometimes I also like to add nuts or granola, and a dollop of coconut yogurt with some extra fruit. You can use whatever you’re in the mood for!

This Berry Quinoa Breakfast Bowl will stay fresh in the refrigerator for at least 2 days. If you make this breakfast bowl at night and leave it in the fridge, the chia seeds will absorb part of the berry smoothie and make the breakfast bowl extra creamy. Not in the mood for berries or bananas? Replace them with any fruit you have on hand, such as mango, pineapple, sweet peaches.
