These rich double dark chocolate cookies pack a decent dose of berries to boot! Sometimes life calls for double chocolate. When that happens, you might as well have the most nutrient-dense chocolate cookies in town.
These rich double dark chocolate cookies pack a decent dose of berries to boot! Sometimes life calls for double chocolate. When that happens, you might as well have the most nutrient-dense chocolate cookies in town.

  1. Add all the ingredients except the vegan chocolate chips and small pinch of cacao nibs in the blender. Blend on high speed with a spoon tamper (if possible) and use a spoon to turn it around a few times until the mixture is mostly sticky but still contain some whole bits. (That will give it a nice crunch!)
  2. Spoon the mixture out into a small bowl and add the teaspoon of vegan chocolate chips and a small pinch of cacao nibs (just to give it more of a crunch). Mix it up with a spoon.
  3. To shape them into cookies, you can do what I did, put the mixture into a one tablespoon round measuring spoon, then press it in, and use a small spoon to scoop it out. This will create a very good cooking half circle.
  4. Keep repeating until all the cookies are made.
