With this lovely raw vegan variation on the lemon tart, we’ve got macadamia nuts and almonds making up the chewy crust, along with some medjool dates — the raw “bakers” secret weapon. Dates can be used to make all kinds of surprising treats, and tart or pie crust is one of the best.

These tarts require a little bit of planning ahead, since you have to thaw the raspberries and soak the nuts overnight, and there is some assembly required. But the effort is well worth the delightful zesty tarts you come out with in the end. Can you imagine a better summer picnic snack than these awesome lemon raspberry tarts??

This recipe is worthwhile just for the fun of the surprise it will inspire in your friends or family. But on top of that, it’s just so darn cool.

Cheese really is a pretty special thing. There’s nothing quite like the rich, creamy, tangyness of good cheese. Nothing, that is, except this vegan cashew cheese. Often times, in vegan cooking, recipes that attempt to emulate non-vegan dishes tend to fall a little flat. That isn’t the case at all with this recipe. You can think of this cashew cheese as more of a replacement for dairy cheese than as an imitation.

While this recipe does involve quite a number of steps, it has remarkably few ingredients. The added probiotic powder helps not just to give it that cheesy aroma, but also grants it the probiotic benefit of dairy cheeses. That means your gut will love this cashew cheese as much as your mouth.

On a similar vein, I would definitely recommend including the nutritional yeast. It really helps add a subtle depth of flavor which is so nice in good cheeses.

Or maybe it’s a reference to the inevitable improvement in mood that will accompany eating such a lovely treat. Why they call the cake ladyfingers is a whole other question…

Whatever the origin of the name, this is no light energy snack! This is some serious dessert. This coconut tiramisu is just further proof that anything worth doing, is worth doing raw and vegan. The best part is the feeling when you take a bite of the delicious coconut cream squishing out between the ladyfinger layers. Mm.

This recipe boldly makes use of a fresh young coconut, so make sure you watch some videos on how to safely crack these magnificent nuts. As a reward for your efforts, you’ll get some coconut water to enjoy later, too.

A great treat to make for date-night or other occasions when you’re really looking to impress. And of course, you don’t have to be a coffee drinker to love this decadent dessert!

Zucchini Noodle Curry in 10 Minutes

We’ve said it before, and we’ll say it again: zucchini noodles are out of this world. If you’ve got that friend or family member who just doesn’t get how you can be satisfied on a raw, plant based diet, then put 10 minutes aside and make them a serving of this wicked zucchini noodle curry.

Of course, if you’ve been around the raw-food block once or twice, you know all about the wonders of zucchini noodles. And that’s where the subtle brilliance of this simple recipe comes in. When you think curry, you probably think spicy. And with curry powder, chili paste, and cayenne, this zucchini noodle curry delivers.

But you probably also think creamy. Most vegan curries I’ve come across have turned to coconut milk to provide that rich texture, and there ain’t nothing wrong with that. Here we see a different approach, with cashews and avocado stepping up to the plate to thicken things out. But fear not, oh lovers of coconut, for the subtler presence of coconut water will still be bringing that tropical taste we all love.

Thai food is awesome. Crisp, fresh, with a little bit of tang and sweetness, and always so colorful! With this refreshing take on an old favorite, you get all the characteristic taste of a great pad thai, all with wholesome raw ingredients!

The kelp noodles are probably the most intriguing aspect of this pad thai. Kelp is an awesome food, packing a broad spectrum of micronutrients like sodium, potassium and iodine which helps keep your thyroid in good order. It also contains all 9 essential amino acids, and all this in a low-calorie package.

Add to the kelp some tamari, tahini, ginger and miso, and you’re in for an exotic tasting treat. There is a fair amount of ingredients in here, but it’s all awesome stuff and it really isn’t too much work to get it all together. And the gorgeous medley of colors and flavors that you’ll be rewarded with makes the time spent chopping more than worth it. Kelp Noodle Pad Thai is a fantastic dish when you’re looking for a taste a little out of the ordinary!

Strawberry Cashew Cream Cake With Carob Drizzle

I think if everyone knew that you could have a raw vegan cream cake that looks and tastes as amazing as this inspirational creation, there’d be a lot more raw vegans around! Is this what they call a case of “having your cake, and eating it too“?

It’s never made sense to me why anyone would want to have a cake and not eat it. I mean, the whole point of having cakes is to eat them. But looking at this Strawberry Cashew Cream Cake, I can see why people might want to just have it. Look at this thing! It’s a work of art. In cake form!

The combination of carob and maple syrup is amazing. The dark sweetness of these two flavors really compliment the tartness of strawberries. Carob is an amazing substitute for cocoa that comes from a cool Mediterranean tree. The taste is almost like a cross between chocolate and raisins. It works wonderfully as a drizzle, with it’s unique yet familiar flavor.

The hardest part about this recipe is waiting for your cream cake the set in the fridge. Try to wait at least 24 hours. Consider that the time to “have your cake”, and only after that you get to eat it!
