Kombucha is a delicious probiotic drink, with all kinds of claimed health benefits. It's pretty easy to make at home: but be very careful to sterilize all your equipment and to follow proper procedures! You're dealing with bacteria, after all! You can make kombucha with any tea you like, but this recipe was originally designed for use with Celestial Seasonings Sweet Harvest Pumpkin tea for an extra infusion of spices and flavors.

  1. Bring 2 cups of water to a boil.
  2. Steep 4 tea bags in hot water for 5 minutes.
  3. Remove tea bags and add sugar. Stir until dissolved.Let the hot tea cool to room temperature.
  4. Add the Plain kombucha and cooled Sweet Pumpkin Harvest tea to a pitcher and stir.
  5. Pour the kombucha into flip-top bottles.
  6. Seal the bottles and let sit in a cool, dark place for 3-7 days.
  7. After 3 days check one of the bottles to see if it's bubbly. Store in the fridge and serve cold.
  8. If it's not bubbly, leave it out for a few more days. Check each day until it's carbonated.
