  1. Place jam and vinegar in the bowl of a food processor and blend until well combined.
  2. Drizzle the olive oil in gradually while the processor is running.
  3. After the dressing has mixed for a minute, scrape down the sides and bottom of the bowl, add the salt and pepper then continue to blend for another few minutes. The dressing should be very silky smooth and a consistent brown in color.
