Apricot Vinaigrette

Ingredients
  

  • 1/4 cup dried apricots (soaked 1 hour or more)
  • 1/2 Tbsp lemon juice
  • 1/2 Tbsp coconut vinegar (or apple cider vinegar)
  • 3 Tbsp water
  • 1/4 Tbsp olive oil (extra virgin)
  • 1/4 Tbsp tarragon
  • 1/8 tsp salt

Method
 

  1. Combine ingredients in a blender. Scrape down the sides of the blender to mix evenly.
  2. Process until a smooth, even mixture is achieved.
  3. Adjust salt and sweet ingredients for taste. The dressing should taste more sweet than sour, and the consistency should be thin enough use in a squirt bottle.
  4. Label, date, and refrigerate. Consume within 10 days.
