Chinese Style Cauliflower with Orange Sauce

Ingredients
  

  • 1/2 cauliflower (medium head)
  • 1/2 cup apricots (organic, dried, unsulphured)
  • 1 cup orange juice
  • 2 Tbsp coconut aminos (or liquid aminos, or soy sauce)
  • 1 garlic clove
  • 1/3 ginger (fresh)
  • 1/2 lemon juice
  • 1/2 green onions (bunch, sliced for garnish)
  • 1/2 Tbsp sesame seeds (for garnish)

Method
 

  1. Wash and dry cauliflower. Remove leaves and cut into small pieces, not more than ½”.
  2. Prepare the sauce by blending all of the ingredients until smooth* then pour over the cauliflower. Allow it to marinate for about 2 hours. If possible, you can instead place in into a dehydrator at 110 F for 2 hours to allow it to soften a bit and warm through.
  3. Sprinkle with green onions and sesame seeds before serving.
