Crunchy Asian Salad With Creamy Peanut Dressing

Ingredients
  

  • 2 cups cabbage (thinly shredded)
  • 2 cups lettuce (shredded romaine, mixed greens)
  • 2 cups brussels sprouts (thinly shredded)
  • 1/2 cups carrots (shredded)
  • 1/2 cups cashew halves
  • 2/3 cups mandarin oranges
  • 1/2 avocado (sliced)
  • 1 Tbsp sesame seeds
  • 2 Tbsp peanut butter
  • 3 Tbsp rice vinegar
  • 2 Tbsp soy sauce
  • 2 tsp honey
  • 1 tsp sesame oil
  • salt
  • pepper

Method
 

  1. Toss vegetables together for salad. Top each salad with nuts, oranges, avocado slices, and sesame seeds.
  2. Whisk together ingredients for dressing, adding more vinegar, honey, sesame oil, salt, and pepper to taste. Add a little warm water to loosen up the dressing if necessary. Drizzle dressing over salad and enjoy!
