Green Curry Soup

Ingredients
  

  • 1 avocado (pitted)
  • 1 cup water
  • 1 Tbsp miso
  • 2 tsp curry powder
  • 2 tsp apple cider vinegar (or lime juice)
  • 1 garlic clove
  • 1/8 tsp salt
  • 1 tsp ginger (fresh, minced)
  • 1/8 tsp cayenne
  • 1 date (optional; pitted)
  • 1/4 cup carrot (shredded)
  • 1/4 cup cucumber (shredded)
  • 1/4 cup red bell pepper (thinly sliced)
  • 1/4 cup cilantro (chopped)
  • 2 Tbsp green onion (chopped)
  • 6 cherry tomatoes (diced)

Method
 

  1. Blend Curry Ingredients until smooth. Add water for a thinner broth.
  2. oup can be warmed on stovetop. Place finger in soup while on low heat and continually stir; once warm, remove from heat and enjoy.
  3. Add Soup Ingredients and Curry to bowl and enjoy.
