Raw Butternut Squash Soup

Ingredients
  

  • 1 lb squash cut up into smaller cubes
  • 2 in turmeric
  • 1/2 cup coconut water or coconut milk for extra creaminess
  • 1 yellow or orange bell pepper
  • 2 dates
  • 1 tsp cumin
  • juice of 1 medium lemon
  • 1/2 cup sun-dried tomato soaked in 1 cup of water
  • kaffir lime leaves

Method
 

  1. Add ingredients in a high-powered blender and blend until smooth
  2. Blend ingredients in a high-powered blender
  3. Place butternut squash soup in a bowl and add a dollop of tomato blend.
  4. Slice kefir lime leaves as thinly as possible and add that as your last garnish on top of the sun-dried tomato.
