Vanilla Slices

Ingredients
  

  • 2 1/2 cups desiccated coconut
  • 1 1/2 cups dates
  • 1 tsp vanilla powder
  • salt (pinch)
  • 2 cups cashews (soaked 1-2 hours)
  • 1/2 cup coconut cream
  • 1/4 cup rice malt syrup
  • 6 Tbsp coconut oil
  • 4 Tbsp rice malt syrup
  • 1/2 tsp vanilla
  • 2 Tbsp passion fruit (optional, seeds removed)

Method
 

  1. Place all the base ingredients into a food processor and run until sticky mixture is formed. Press the mixture in the bottom of a cake tin and set aside.
  2. Place all the filling ingredients into a food processor and run until smooth. Spread the mixture over the base and pop the cake in the freezer.
  3. For the icing mix all the ingredients together using a spoon or a fork. If your coconut oil is liquid, put the icing mixture in the fridge for few minutes to firm up.
  4. Spread the icing mixture over the cake and pop the whole cake back in the freezer to set. When set, cut into slices and serve! Enjoy!
