Vegetable Stir Fry with Cauliflower Rice

Ingredients
Vegetables
- 1/2cupred bell pepper(chopped)
- 1/2cupsnow peas
- 1/4cupmushrooms
- 1/4cup carrots(shredded)
Cauliflower Rice
- 1/2small headcauliflower(about 3-4 cups worth and cut into chunks)
- 1clovegarlic
- 2Tbspscallions
Stir Fry Sauce
- 2Tbspunsweetened coconut milk
- 1Tbspnama shoyu(OR low sodium soy sauce, tamari, braggs/coconut aminos)
- 1/2clovegarlic(minced)
- 1/8tspblack pepper
- 1/2Tbspsesame oil(OR extra virgin olive oil)
- 1/8tspraw honey OR pure maple syrup

- First, mix all the Stir Fry Sauce Ingredients into a bowl and set aside.
- Place veggies in a bowl with the stir fry sauce and let soak while you prepare the rice.
- Place cauliflower and garlic into a food processor (or blender it just might be a little trickier) and pulse until desired rice look. Add scallions and pulse a couple times.
- Place rice in a bowl and pour stir fry vegetables on top and enjoy!
