Asian Zing Stir Fry with Parsnip Rice

Ingredients
  

  • 1 parsnip (large, or alternative celeriac, turnip, or cauliflower, cubed to make about 4 cups)
  • 1 garlic clove
  • 2 Tbsp nutritional yeast (optional)
  • sea salt (to taste)
  • 1/2 cup celery (sliced)
  • 1 cup bell pepper
  • 1 cup sugar snap (or snow peas)
  • 1/2 cup carrots (halved and sliced)
  • 1 cup mushrooms (sliced)
  • 1/4 cup green onion (small, sliced)
  • 1/4 cup homemade asian zing sauce
  • 1/4 cup tahini
  • 2 Tbsp tamari (or nama shoyu)
  • 1 Tbsp lime juice
  • 1 Tbsp sesame oil
  • 1 garlic clove (minced)
  • 1 tsp honey
  • 2 Tbsp water

Method
 

  1. Place all Rice ingredients in a food processor and pulse until it looks like rice. Over-processing will turn it to mush, so keep a close eye on it.
  2. Place chopped veggies in a bowl then place Asian Zing ingredients in a bowl and whisk together, then toss with the veggies.
  3. Serve over the rice and sprinkle with sesame seeds and enjoy!
  4. Place Asian Zing ingredients into a bowl and whisk together.
