BBQ Marinated Veggies

Servings: 3 cups

Ingredients
  

  • 1/4 cup miso (any miso)
  • 1/4 cup orange juice
  • 1 Tbsp extra virgin olive oil
  • 1/2 cup sun dried tomatoes (soaked for 1 hour)
  • 2 Tbsp coconut vinegar (or apple cider vinegar)
  • 1 Tbsp honey
  • 1 tsp tamari
  • 2 garlic cloves
  • 2 tsp fresh ginger (minced)
  • 2 tsp paprika
  • pinch of sea salt
  • 1/2 cup bell pepper (seeded and chopped)
  • 1/2 cup zucchini (chopped)
  • 1/4 cup yellow onion (chopped)
  • 1 cup mushrooms (chopped)

Method
 

  1. Blend BBQ Marinade ingredients until smooth.
  2. Place chopped ingredients in a sealable container and cover with 1/2 of the Marinade (freeze the other half for future BBQ Veggies). Mix marinade with chopped ingredients by hand or seal in a container and shake.
  3. Label, date, and refrigerate.
