Beetroot Date Bars

Ingredients
  

  • 1 cup Beetroot
  • juice of 1/2 orange
  • 2 Tbsp coconut oil
  • 6 soft, sticky dates
  • 2 ripe bananas
  • 1 cup oats
  • 1/4 cup dried blueberries
  • 1 1/2 Tbsp chia seeds

Method
 

  1. Combine all the main ingredients in the food processor fitted with the S blade and process until well combined.
  2. Add remaining ingredients and pulse a few times.
  3. Line a square pan with cling firm and spread the mixture evenly.
  4. Top with granola and dried blueberries.
  5. Cover and freeze overnight before cutting into bars or squares.
