Stir together the ingredients in a bowl until they form a moist dough.
Press into a tall cookie mold or cupcake paper and put in the freezer.
Blend the mango and berries together, adding a tiny amount of coconut milk if needed. It should be like sorbet but we are calling it ice cream… shh.
Spread a bit on top of your cookie and put back in the freezer until the ice cream is solid.
Whisk together the ingredients until smooth.
Pour over your frozen ice cream and once more put it back in the freezer until the chocolate hardens, it’ll take 30 minutes or so. Enjoy:)
