Berry Quinoa Breakfast Bowl

Ingredients
  

  • 2 cups rice coconut milk
  • 2 pcs ripe bananas fresh or frozen
  • 1 cup berries fresh or frozen
  • large pinch of sea salt optional
  • 2 cups quinoa
  • 2 Tbsp chia seeds
  • berries fresh or frozen and thawed
  • shredded coconut
  • pumpkin seeds or your favourite nuts like granola..

Method
 

  1. Pour your rice coconut milk into the blender together with the bananas, berries and sea salt. Blend until smooth.
  2. Fill two bowls with 1 cup quinoa and 1 tablespoon chia seeds each. Pour the berry smoothie on top.
  3. Add your favorite toppings. Here I used berries, shredded coconut, pumpkin seeds, chia seeds and a sprinkle of toasted almond flakes. Sometimes I also like to add nuts or granola, and a dollop of coconut yogurt with some extra fruit. You can use whatever you’re in the mood for!
