Blueberry Cheesecake

Ingredients
  

  • 1 cup almond meal (or ground almonds)
  • 1 Tbsp flax seed (ground)
  • 3 Tbsp honey
  • 2 Tbsp coconut oil
  • 1/2 tsp cinnamon (optional)
  • pinch of sea salt
  • 1/2 cup cashews (soaked at least 20 minutes, best if soaked overnight)
  • 1 1/2 Tbsp lemon juice
  • 3 Tbsp honey (raw)
  • 3 Tbsp coconut oil (melted)
  • 1/2 tsp vanilla extract (pure)
  • 3/4 cup blueberries
  • 2 Tbsp blueberries
  • 1 Tbsp coconut flakes (unsweetened )
  • 2 Tbsp walnuts

Method
 

  1. Melt coconut oil, honey, salt, and cinnamon together. Mix in almond meal or pulp from almond milk.
  2. Place into a small pan, carton, or muffin tin and press firmly. Refrigerate and begin making the Cheesecake.
  3. Place all Blueberry Cheese Cake ingredients into a blender and blend until creamy.
  4. Place Cheesecake ingredients on top of cake. Top with blueberries, walnuts, and coconut flakes. Keep chilled until ready to serve
