Carrot Walnut Crunch Salad & Zucchini Spinach Soup

Ingredients
  

  • 1 cup zucchini (chopped)
  • 1 cup spinach (lightly packed)
  • 1/2 Tbsp lemon juice
  • 1/2 cup water
  • 1/2 tsp sea salt
  • 2 Tbsp dill (chopped; optional)
  • 1 Tbsp nutritional yeast
  • 1 cup carrot (shredded)
  • 1 bell pepper (shredded)
  • 1/4 cup cilantro (fresh, chopped)
  • 3 Tbsp homemade apricot vinaigrette (click name for more info)
  • 1 homemade walnut bites (click name for more info)

Method
 

  1. Blend all ingredients until smooth.
  2. For a warm option, heat it on low with a finger in the soup. Stir to keep the bottom from getting too hot; it’s ready once your finger is warm.
  3. Place shredded carrots, bell peppers, cilantro, and dressing in a bowl and mix together.
  4. Crumble Walnut Bites on top and drizzle Apricot Vinaigrette on top and enjoy!
