Cashew Mayo

Servings: 1 cup

Ingredients
  

  • 1 cup cashews (soaked 1 hour or more)
  • 2 dates (pitted and chopped)
  • 1 Tbsp coconut vinegar (or apple cider vinegar)
  • 1 garlic clove
  • 1 Tbsp miso
  • 1/8 tsp sea salt
  • 1/2 tsp ginger (fresh)
  • 1/4 cup water
  • pinch of cayenne

Method
 

  1. Blend all ingredients (except garlic).
  2. With the blender running, add the garlic. Mixture should emulsify and become like mayonnaise.
  3. Store in sealed container, label, date, and refrigerate. Consume within three weeks.
