Chia Berry Pudding with Chocolate Drizzle

Ingredients
  

  • 1/2 cup unsweetened almond milk
  • 1/2 cup blueberries
  • 1/4 cup strawberries
  • ice (as needed)
  • 1/4 cup unsweetened almond milk
  • 1 Tbsp chia seeds
  • 1 pinch cinnamon
  • 1 1/2 Tbsp coconut oil (melted)
  • 2 Tbsp cacao powder
  • 2 tsp pure maple syrup
  • 1 drop peppermint oil OR 1 mint leaf (optional)
  • 1 Tbsp unsweetened dairy-free milk (optional)

Method
 

  1. Place pudding ingredients into a jar with a lid. Close with lid and shake till combined and set aside.
  2. Place smoothie ingredients into a blender and blend smooth.
  3. Place chocolate ingredients into bowl and mix until combined.
  4. Place smoothie, chia pudding in layers and drizzle the chocolate on top and enjoy!
  5. TIP: To have a tasty quick dessert tomorrow night, save half of the chocolate and pour small disks on plastic or wax paper and place in the freezer or fridge. Then tomorrow you can snack on the chocolate disks and feel the goodness melt in your mouth.
