Chocolate Almond Cookies

Ingredients
  

  • 1/2 cup almonds (whole)
  • 1/3 cup oat flour
  • 1 Tbsp cacano nibs
  • 2 Tbsp shredded coconut (fine)
  • 2 Tbsp brown rice syrup
  • 1 Tbsp golden flaxseed meal
  • 1 Tbsp coconut oil (virgin)
  • 1 tsp vanilla extract (pure)
  • a pinch himalayan salt (or sea salt)
  • 2 tsp dark choolate chip (vegan)

Method
 

  1. Combine all the ingredients except the dark chocolate chips in the blender and blend until it becomes a sticky mixture with not a lot of big pieces remaining.
  2. Spoon the mixture into a bowl, add the chocolate chips and stir it around a little.
  3. Fill a small ice cream scoop with it and press down so it can become the shape of a cookie. Keep repeating until all the dough is used up.
