Chocolate Avocado Pudding

Ingredients
  

  • 1/2 avocado (ripe, pitted and delicious)
  • 1 Tbsp unsweetened cocoa powder
  • 1 Tbsp maple syrup
  • 1/3 cup unsweetened coconut milk
  • 1/2 tsp pure vanilla extract
  • 1 Tbsp chia seeds (ground)
  • 1 pinch sea salt

Method
 

  1. Place all ingredients in the food processor and blend until smooth.
  2. Top with chopped nuts, cocoa nibs and a mint leaf.
