Chocolate Mint Avocado Ice Cream

Ingredients
  

  • 3 avocados
  • 1/2 cup coconut cream (or full fat coconut milk)
  • 1/2 cup maple syrup (or more, to taste)
  • 2 Tbsp lime juice
  • base ice cream
  • 2-3 drops peppermint oil (or to taste)
  • chocolate drizzle
  • cacao nibs (raw, for decoration, optional)
  • 1/2 cup coconut oil
  • 1/2 cup cacao powder (raw)
  • 1/2 cup maple syrup

Method
 

  1. Place all the base ingredients into a food processor and run until smooth. Taste and adjust. Add the optional extras. If you are making mint avocado ice cream, leave the chocolate drizzle and cacao nibs for decorating!
  2. Pour the ice cream into ice cream molds or into a container and freeze for about 4 hours. Serve and enjoy!
  3. Melt coconut oil and mix in raw cacao powder and sweetener of your choice.
