Coconut Raspberry Smoothie

Ingredients
  

  • 1 cup raspberries (frozen)
  • 1 banana (frozen)
  • 2 Tbsp coconut cream
  • 1/4 cup coconut cream water (explanation below)
  • 1 tsp coconut oil
  • 1/4 cup shredded coconut
  • 3/4 cup non-dairy milk
  • 1 Medjool date (pitted)
  • 1 cup ice cubes

Method
 

  1. Open this can of coconut cream and get 2 tbsp of the solid cream for the smoothie. Dig out the rest of the cream and save it in another jar, and then use the sludgy liquid from the bottom in the smoothie too. It's approx. 1/4 C of liquid with some chunks of cream in it.
  2. Put this plus all the remaining ingredients into a vitamix or high powered blender and combine until smooth.
