Double Chocolate Berry Cookies

Ingredients
  

  • 1/3 cup oat flour (plus 1 Tbsp)
  • 1/4 cup almonds (whole)
  • 1/4 cup cashew whole)
  • 2 Tbsp hemp hearts
  • 2 Tbsp dark cocoa powder
  • 1 Tbsp cacao powder
  • 1 Tbsp cacao nibs
  • 1 Tbsp shredded coconut
  • 1 Tbsp flaxseeds
  • 1 Tbsp walnuts
  • 1 Tbsp goji berry powder
  • 1 Tbsp blueberry and acai powder (or other berry powder)
  • 1 Tbsp coconut oil (virgin)
  • 1 Tbsp coconut oil
  • 2 Tbsp maple syrup
  • 1 tsp vanilla powder (optional)
  • 1 tsp vanila extract
  • 1 tsp vegan chocolate chips
  • pinch cacao nibs

Method
 

  1. Add all the ingredients except the vegan chocolate chips and small pinch of cacao nibs in the blender. Blend on high speed with a spoon tamper (if possible) and use a spoon to turn it around a few times until the mixture is mostly sticky but still contain some whole bits. (That will give it a nice crunch!)
  2. Spoon the mixture out into a small bowl and add the teaspoon of vegan chocolate chips and a small pinch of cacao nibs (just to give it more of a crunch). Mix it up with a spoon.
  3. To shape them into cookies, you can do what I did, put the mixture into a one tablespoon round measuring spoon, then press it in, and use a small spoon to scoop it out. This will create a very good cooking half circle.
  4. Keep repeating until all the cookies are made.
