- Chop cucumber into ½ inch pieces, deseed and trim pepper, cut into thin strips, trim and cut scallions into 2 inch pieces, mince garlic, chop parsley, cut cauliflower into florets, peel and thinly slice carrots.
- Place all veggies into a bowl, add olive oil and apple cider vinegar and toss well. Cover and refrigerate.
