Marinated Vegetable Salad

Ingredients
  

  • 1 cucumber
  • 3 carrots
  • 1 bunch scallions
  • 1 red bell pepper
  • 1/2 bunch parsley
  • 6 cloves garlic
  • 2 cups cauliflower
  • 2 zucchini
  • 1/4 cup raw apple cider vinegar (or coconut vinegar)

Method
 

  1. Chop cucumber into ½ inch pieces, deseed and trim pepper, cut into thin strips, trim and cut scallions into 2 inch pieces, mince garlic, chop parsley, cut cauliflower into florets, peel and thinly slice carrots.
  2. Place all veggies into a bowl, add olive oil and apple cider vinegar and toss well. Cover and refrigerate.
