Mediterranean Sprouted Chickpea Salad

Ingredients
  

  • 1 1/2 cup sprouted chickpeas
  • 1 cup cherry tomatoes (halfed)
  • 1 cup cucumber (diced))
  • 1/4 cup Red Onion (diced)
  • 1/2 cup red bell pepper (diced)
  • 1 Tbsp extra virgin olive oil
  • 2 Tbsp lemon juice
  • 2 1/2 Tbsp cilantro (finely chopped)
  • 1/2 tsp oregano
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Method
 

  1. First you need to have chickpeas that can be sprouted. Soak 3/4 cup dry chickpeas for 8-12 hours in water. After soaking place on sprouting tray or a wide container (with holes on the bottom) for 2-3 days. Rinse 2-3 times a day and spin the excess water. Once you see the sprout tails 1/4 inch long then they are ready for the salad.
  2. Add dressing ingredients into a small bowl and whisk together till combined.
  3. Toss all ingredients including dressing recipe in a bowl and enjoy!
