Moroccan Mint Red Cabbage Slaw With Hemp Seeds

Ingredients
  

  • 1 head of red cabbage (small, very thinly shredded)
  • 4 carrots (thinly sliced with a mandolin)
  • 1/2 cup mint (fresh, chopped)
  • 1/2 cup cilantro (fresh, chopped)
  • 4 scallions (chopped)
  • 1/2 cup walnuts
  • 1/2 cup Raisins
  • 3 Tbsp hemp seeds
  • 1/4 cup olive oil extra virgin
  • 1 lemon (juice and zest)
  • 1 Tbsp maple syrup (pure)
  • 1 garlic clove (minced)
  • 1/2 tsp cinnamon
  • 1/4 tsp curry powder
  • 1/2 tsp sea salt (depending on taste)

Method
 

  1. Add shredded cabbage, carrots, mint, cilantro, scallions, walnuts, raisins and hemp seeds in a large bowl and set aside.
  2. Blend together dressing ingredients and pour over slaw mixture, toss to coat. Enjoy!
