Ingredients
  

  • 1/3 cup Red Onion (diced)
  • 1 cucumber (chopped)
  • 2 cups tomatoes
  • 1 cup cilantro OR parsley (chopped
  • 1 Tbsp lemon juice
  • 1 Tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Method
 

  1. Add ingredients into a bowl mix, cover and refrigerate.
