Onion & Cucumber Salad

Ingredients
  

  • 2 cucumbers (large)
  • 1 yellow onion (medium)
  • 1 cup white vinegar
  • 1/2 cup coconut milk (unsweetened milk)
  • 1/2 cup water
  • 1 Tbsp cane sugar
  • 1 Tbsp black pepper
  • 1 Tbsp sea salt

Method
 

  1. Using a mandolin or knife, slice the cucumbers and onions into ⅛" slices. Place them in a large bowl.
  2. Add the remaining ingredients and toss together.
  3. Store in the refrigerator for up to 7 days.
