Method
- Soak dates in water for 10 minutes then place pecans into a food processor and pulse until finely ground.
- Add all ingredients (including dates) into the food processor and pulse until combined.
- Make small cookie patties and place onto a tray. Freeze for 30 minutes.
- Move onto the frosting if you dare or have the time.
- Drain and rinse soaked cashews then Place in all ingredients (including cashews) into blender and blend until creamy.
- Place on top of Pumpkin Spice Cookies.
