Raw Vegan Tacos

Ingredients
  

  • 1 1/2 cup almonds (soaked for at least 2 hours)
  • 2 carrots (peeled and chopped in large chunks)
  • 1/4 cup onion (red)
  • 2 tsp aminos (liquid)
  • 1 Tbsp mexican mix (cumin, garlic powder, oregano, thyme, marjoram and himalayan salt)

Method
 

  1. Soak nuts for a minimum of 2 hours.
  2. Pulse the nuts in a food processor until they are coarsely chopped.
  3. Remove the nuts and set aside in a medium bowl.
  4. Put the carrots, onion and liquid aminos in the food processor and pulse until finely chopped.
  5. Toss the nuts and carrot mixture together and add the Mexican seasoning and stir together.
