Spanish Gazpacho

Ingredients
  

  • 3 cups tomatoes (big)
  • 1/2 cup red pepper
  • 1 1/4 cups cucumber (medium)
  • 1/2 cup water
  • 1 tbsp olive oil
  • 1 tbsp apple cider vineger
  • 1 tsp salt
  • 1 garlic clove
  • cucumber
  • avocado
  • pepper
  • onion
  • tomato
  • cilantro or any other fresh herbs

Method
 

  1. You simply blend all of the soup ingredients in a high speed blender!
  2. For the toppings, use any vegetables you like and cut them into small cubes. It’s nice to vary these from time to time to make it taste different.
