Spicy Deviled Avocados

Ingredients
  

  • 1 avocado (chopped)
  • 1 Tbsp celery (finely chopped)
  • 1 Tbsp onion (finely chopped)
  • 2 tsp mustard
  • 2 tsp mayo (use something like veganaise or make your own)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp paprika
  • lettuce (optional)
  • tomato (optional)

Method
 

  1. Coarsely chop the avocado, add the remaining ingredients, then stir gently until evenly incorporated.
  2. Store leftovers for up to a day or two in an air tight container.
