Spinach Mushroom Spaghetti

Ingredients
  

  • 1/2 cup cashews (raw)
  • 1/2 tsp himalayan salt
  • 1 lime (juice of)
  • 1 clove garlic
  • 1/4 cup water (may need to add more as you go)
  • 4 basil leaves (or other herbs)
  • 1 zucchini
  • 4-6 mushrooms
  • 1 handful spinach

Method
 

  1. Throw all ingredients in a Vitamix and blend until smooth and desired consistency.
  2. Thinly slice mushrooms. Sprinkle them with salt, and mix them up with 1 tsp olive oil.
  3. Peel and cut the ends off the Zucchini and create noodles using a Spiralizer or any other method to get the desired noodle.
  4. Put noodles onto a plate, add the mushrooms and spinach and top with the creamy sauce.
  5. Garnish with finely chopped basil on top. Enjoy
