Stuffed Bell Peppers

Ingredients
  

  • 1 red bell pepper
  • 1/3 homemade Mediterranean Marinated Vegetable
  • 1/2 avocado

Method
 

  1. Cut off top of bell pepper and spoon out insides. Optional: turn on oven at lowest temp and place bell pepper inside while you prepare the filling. It will be just enough to warm it up without cooking it.
  2. Chopped homemade Mediterranean Marinated Vegetable into smaller pieces.
  3. Mix Mediterranean Marinated Vegetable and Avocados into a guacamole mixture.
  4. Add mixture into bell pepper and enjoy!
