Super Veggie Salad

Ingredients
  

  • 2 cups spinach
  • 1 cup arugula
  • 1 cup tomatoes (diced)
  • 1 cup cucumber (diced)
  • 1/4 cup onions (red, diced)
  • 2 Tbsp sunflower seeds
  • 2 Tbsp homemade garlic avocado dressing
  • 1 avocado (seeded)
  • 1/2 cup water
  • 1/2 cup olive oil
  • 1/2 cup onion (diced)
  • 1/2 red bell pepper
  • 2 Tbsp lemon juice (or coconut vinegar)
  • 2 garlic cloves
  • 1 handful spinach (small, adds color and extra nutrition)
  • 1/2 Tbsp miso (optional)
  • sea salt (to taste)

Method
 

  1. Mix all ingredients in a bowl. Toss with Garlic Avocado Dressing and enjoy.
  2. Blend all ingredients until smooth. Store dressing in a sealed container, label, date, and refrigerate. Consume within three weeks.
