Tropical Chia Salad

Ingredients
  

  • 1/2 cup pineapple (cubed)
  • 1/2 cup mango (diced)
  • 1/2 cup blueberries (raspberry/blueberries fresh or frozen)
  • 1/2 cup orange juice (freshly squeezed)
  • 1 Tbsp chia seeds
  • 1/4 tsp cinnamon
  • 1/4 tsp pure vanilla extract
  • sea salt (pinch)

Method
 

  1. Juice oranges and combine with chia seeds.
  2. Prepare all ingredients, place in a large bowl, and combine and allow chia to hydrate for at least a half-hour.
  3. Garnish with fresh mint leaves.
