Vegetable Stir Fry with Cauliflower Rice

Ingredients
  

  • 1/2 cup red bell pepper (chopped)
  • 1/2 cup snow peas
  • 1/4 cup mushrooms
  • 1/4 cup carrots (shredded)
  • 1/2 small head cauliflower (about 3-4 cups worth and cut into chunks)
  • 1 clove garlic
  • 2 Tbsp scallions
  • 2 Tbsp unsweetened coconut milk
  • 1 Tbsp nama shoyu (OR low sodium soy sauce, tamari, braggs/coconut aminos)
  • 1/2 clove garlic (minced)
  • 1/8 tsp black pepper
  • 1/2 Tbsp sesame oil (OR extra virgin olive oil)
  • 1/8 tsp raw honey OR pure maple syrup

Method
 

  1. First, mix all the Stir Fry Sauce Ingredients into a bowl and set aside.
  2. Place veggies in a bowl with the stir fry sauce and let soak while you prepare the rice.
  3. Place cauliflower and garlic into a food processor (or blender it just might be a little trickier) and pulse until desired rice look. Add scallions and pulse a couple times.
  4. Place rice in a bowl and pour stir fry vegetables on top and enjoy!
