Zucchini Beet Hummus

Ingredients
  

  • 2 zucchinis
  • 1 clove garlic
  • 1 tsp cumin
  • 2 tsp fresh lemon juice
  • 2 Tbsp tahini
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 Tbsp chia seeds
  • 2 Tbsp nutritional yeast

Method
 

  1. Place all ingredients (except chia seeds) into a blender and blend smooth or until desired consistency. Add water to keep it just enough blending.
  2. When it's ready, add the chia seeds and blend for 20 more seconds. The chia will help thicken the chia so it will not be runny.
  3. Move into a container, cover, label and refrigerate.
