Zucchini Spinach Soup & Sunflower Avocado Bliss

Ingredients
  

  • 1 cup zucchini (chopped)
  • 1 cup spinach (lightly packed)
  • 1/2 Tbsp lemon juice
  • 1 Tbsp nutritional yeast
  • 1/2 cup water
  • 1/4 tsp sea salt
  • 2 Tbsp dill (chopped; optional)
  • 1/2 avocado
  • 2 Tbsp sunflower seeds (raw)
  • pinch of salt
  • pinch of pepper
  • 1 Tbsp lemon juice
  • 1 tsp coconut aminos (optional)

Method
 

  1. Blend all ingredients until smooth. For a warm option, heat it on low with a finger in the soup. Stir to keep the bottom from getting too hot; it’s ready once your finger is warm.
  2. Place sunflower seed inside of avocado half then add lemon, salt, and pepper to taste.
  3. Add a dab of olive oil and coconut vinegar for an Italian flavor.
