Ingredients

1 cucumber (sliced into thin disks)
1/2 cup tomatoes (diced)
1/4 cup scallions (diced)
1/4 avocado (diced)
1/4 cup cilantro
3 Tbsp homemade taco meat
1/4 cup homemade cashew cheese

Method

Add cucumber slices on plate.
Top with veggies, cheese, taco meat and garnish with cilantro and enjoy.
