Green Curry Soup

Ingredients
Curry Ingredients
- 1avocado(pitted)
- 1cupwater
- 1Tbspmiso
- 2tspcurry powder
- 2tspapple cider vinegar(or lime juice)
- 1garlic clove
- 1/8tspsalt
- 1tspginger(fresh, minced)
- 1/8tspcayenne
- 1date(optional; pitted)
Soup Ingredients
- 1/4cupcarrot(shredded)
- 1/4cupcucumber(shredded)
- 1/4 cupred bell pepper(thinly sliced)
- 1/4cupcilantro(chopped)
- 2Tbspgreen onion(chopped)
- 6cherry tomatoes(diced)

- Blend Curry Ingredients until smooth. Add water for a thinner broth.
- oup can be warmed on stovetop. Place finger in soup while on low heat and continually stir; once warm, remove from heat and enjoy.
- Add Soup Ingredients and Curry to bowl and enjoy.
