Walnut Meat (makes enough for 4 tacos)
Cashew Sour Cream

Walnut Meat
  1. Place all ingredients into the food processor. Pulse until the mixture comes together. Set aside.
Cashew Sour Cream
  1. Place all ingredients into the blender and let it go until smooth and creamy. Taste and adjust lemon if you want it more tart and salt.
Tacos
  1. 4 big pieces of Boston lettuce Guacamole Thinly sliced scallions Diced tomatoes Shredded purple cabbage Drop the walnut meat into the lettuce wrap and top it with everything. Enjoy!
