Ingredients Method

Ingredients

2 cups cashews
1/4 cup coconut oil (melted)
1 tsp vanilla powder
1/4 cup maple syrup (or liquid sweetener of your choice)
1/2 cup chocolate chips (dairy free)
pinch of salt

Method

Prepare the choc chips first, by using the instructions above, unless you are using store-bought choc chips.
Place all the cookie dough ingredients into a food (except choc chips) processor and run until smooth.
Press the dough into a cling wrap lined cake tin or silicone molds. Press the choc chips in the dough and pop in the freezer to set.
Once the dough mixture has set, cut into small squares and enjoy. Store in the fridge.
